As I mentioned on my post about the Levain Cookies recipe, I love to cook and I love trying to recreate foods and dishes I’ve tried at restaurants. And I bet this recipe is probably not a recipe that it’s on top of Google searches – but I guess it doesn’t hurt to share it. Goodsugar Banana Bread is one of the best banana breads I’ve tried in my life – and I’m so glad I was able to recreate a recipe with such a similar result!
So, first of all, in case you are not familiar, Goodsugar was founded by Marcus Antebi, who happens to also be Juice Press founder. Goodsugar is a relatively new vegan wellness business, where juices, salads, soups, and shots are part of a nutrient-forward menu. And there’s a bakery, too. Their first location was open in New York City.

When I saw the video above, from @thecarboholic, I was intrigued. I love banana bread – and I also love her recommendations, so I kept Goodsugar in my radar and, when I finally had the chance, I stopped by to try. And oh boy, it definitely didn’t disappoint. So good! It’s moist and it had a delicious crunchiness – because of a grain called millet. So, if you know this banana bread and you wanna recreate this recipe, don’t skip that!
And you know the most interesting part? It’s vegan, gluten-free and it doesn’t contain refined sugars. So, after checking the ingredients, I combined two recipes to create my version.
Goodsugar inspired vegan and gluten-free banana bread
Ingredients
- 3 tablespoons chia seeds
- 1/2 cup hot water
- 3 bananas (ripe is better!)
- ⅓ cup olive oil
- ⅔ cup maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 and 1/2 cup almond flour
- ⅓ cup tapioca flour
- ⅓ cup buckwheat flour
- 1/4 cup millet
- Mix the water and the chia seeds. Reserve for 5 minutes
- Meanwhile, mash the bananas and mix with the oil, the maple syrup and the vanilla extract. Reserve.
- Mix the flours, salt, cinnamon and baking powder.
- Mix the chia seed mixture with the banana mixture and then add to the dry ingredients mix.
- Lastly, slowly incorporate the millet.
- Bake for 50 min – 350 F
